Finally back at the Saloon, how I missed this place. Even though it was really nice in France. So.. Which delicious meal have you prepared?You present Maya the ratatouille and see a bright sparkle in Maya’s eyes.Ratatouille! You wouldn't believe how often I ate this in the last weeks, it became one of my favorite dishes. Let me try it. But maybe we should heat it up again. Go and get a pot and some coal for the stove.

After you heat up the ratatouille you put it on a plate and place it in front of Maya. With high expectations she takes a bit. The corners of her mouth twist up, she forces herself to swallow. In her eyes you see a mixture of anger and disappointment, some tears run down her cheeks before she sobs.Maya: This is the worst ratatouille I have ever eaten. It is completely tasteless, it lacks provincial herbs and roasted aromas. You should be ashamed serving something like that.Maya walks out of the Saloon, leaving you perplexed. As Maya leaves Henry looks at you. I don't know what this was, but I have never seen her that agitated. The European climate doesn't seem to do her well. You should probably serve her an original French ratatouille, with classic Herbes de Provence. I just found a cookbook with an authentical recipe. You should start getting some potatoes and rosemary, these are one of the key ingredients.As you make your may to the prairie you wish you had a nice animal friend guiding you through this, a rat maybe...

The potatoes look really fresh and small, they are perfect for a classic ratatouille. And the smell of rosemary.. Just leave it in the saloon so long, I don't mind.Henry smiles.Did you know that rosemary resembles the remembrance of the dead? But it's also a sign of love.

We also need a base for the sauce! Of course the classic ratatouille is based on tomatoes, you should get some. We will need a lot to condense their taste. And don't forget about some more herbs... Try sage!

These tomatoes are perfectly red and juicy, they should be perfect for our sauce! And the sage, it smells so intense. No wonder it is often used for its aroma oils. When I was young and sick, my mother would always make me some sage tea. I hated the taste as a child, but now I can see the benefits.

The classic ratatouille also has a lot of aubergine and zucchini in it. But I'm afraid nobody has been growing them here so far. But maybe you can try to get some pumpkin. It's from the same family as zucchini, cucumber and melons.

I managed to cook the sauce for you, but I think it needs a little bit more spice. Maybe we could add some chilis. Not too much, we still want it to be provincial and not Mexican, therefore you should also get some thyme, but right now the Ratatouille tastes pretty dull.

There is one thing missing, it is the herb you need for ratatouille. Go out in the fields and collect some more herbs. Try to find as much lavender as possible. Even though the plants are big, as soon as we have dried them, there won't be that much left.
 Finish
The lavender smells wonderful. If you have some left, I would love to take some and put it with my clothes. Moths hate the smell of lavender. If we add a little pinch of it to the ratatouille it should be fine.I think you can go to Maya and offer her the ratatouille, but first have tea.
